Foie Gras Lobe

Whole foie gras lobe is composed either of a whole liver or of several lobes. It can can be either sold with the veine or deveined. According to their quality, raw livers are classified as “extra” for the best, “first choice”, and finally “all-coming”. The liver should have a nice beige/ivory color with no stain or hematoma and should not be granular.

Foie Gras Sliced

The foie gras sliced is the whole foie gras lobe, portion sliced and individually quick frozen to preserve flavor and texture. Ready to use after defrost. 2 sizes: 30g or 50g in 1kg bag

Foie Gras Terrine

The foie gras terrine is made with the whole foie gras lobes, deveined and seasoned. It is half cooked and ready to eat. It is the finest product as made of 100% foie gras.

Foie Gras Torchon

The foie gras torchon is made with the whole foie gras lobe, deveined and seasoned. It is cooked in a cloth with a broth to ensure smooth texture.

Duck Mousse

The duck mousse is a tasty mousse made of duck liver. The foie gras lobe is emusified with eggs, cream and seasonings. It has a light, airy texture and creamy mouth feel.

Foie Gras Block

It is a reconstituted foie gras, consisting of lobes or finely chopped pieces. If it contains pieces (at least 30%), it is a “block of foie gras with pieces”. Salt, sugar, spices, aromatic plants, brandies, liqueur wines and wines are used as seasonings.
